Stewed Cod

Proulx makes reference to stewed cod many times throughout The Shipping News.  For a taste of this traditional Newfoundland dish follow this recipe.
Ingredients
2lbs fresh cod
1/2 cup chives
2 cups sliced potatoes
salt and pepper
1/4 chopped salt pork

 Directions
First fry salt pork until soft. When pork is soft place fresh cod in the same frying pan and also add chives.  Salt and pepper to taste.  Fry until cod is almost tender.  Add potatoes and cover with water.  Again salt and pepper to taste.  Bring mixture to a boil and simmer until potatoes are tender.
