Fish Chowder

Fish Chowder is a common recipe in Newfoundland.  If cod is not your preference simply add the fish of your choice or a combination of favorite seafood.
Ingredients
1&1/2 lbs codfish
4 tbsp margarine
1/4 cup sliced onion
1 qt boiling water
1tsp salt
1&1/4 tsp pepper
2 cups sliced potatoes
2 cups milk
flour (desired amount)
Directions
Remove skin and bones from codfish and cut into cubes. Melt 3 tbsp of margarine in pot, add onion and cook slowly until yellowed.  Pour in the boiling water and add fish.  Cover and simmer for 20 minutes.  Add the seasoning and potatoes and cook until tender, approximately 20 minutes.  Then add milk, bring to boiling point and stir in flour blended with 1tbsp of butter.  Cook and stir until slightly thickened.
