Fish and Brewis

This recipe is as old as Doctor's Hills ( a little saying from my home to yours).  Every Newfoundlander has eaten this dish, you should try it to.  Tradition doesn't get any better.
Ingredients
1/2 cups chopped salt pork
1 small onion
desired amount of salt codfish
desired amount of hard bread (brewis)
desired amount of potatoes
1/2 cup chopped salt pork
Directions
Soak salt fish overnight in plain water.  Also soak hard bread in plain water overnight.  The following day place soaked salt fish in pot with potatoes.  Cover with water and bring to a boil.  Simmer until potatoes are tender.
In a separate pot bring the hard bread to a boil in the water it was soaked in overnight.  Drain immediately when cooked.
Place salt pork in frying pan and fry with chopped onion until pork is golden.  This mixture is commonly known as 'schruncheons'.  Pour mixture over fish, potatoes and brewis.
