Salt Fish with Potatoes
and Drawn Butter

makes reference to drawn butter when talking about yet another cod
dish. I couldn't leave it out considering the only time I've ever
eaten is with salt cod and potatoes. It's a taste you'll never forget.
Ingredients
Desired amount of salt
codfish
Desired amount of potatoes
1/4 cup of margarine
1 medium onion
2&1/2 tbsp of flour
1&1/2 cups of hot
water
salt and pepper
Directions
Soak salt cod overnight.
The next day place fish in a pot with the potatoes, cover with water and
bring to a boil. Simmer until potatoes are tender.
While fish and potatoes
are simmering melt butter in a saucepan, add chopped onion and cook on
low heat. Next, add flour and blend thoroughly. Add hot water
and cook until the mixture is thickened stirring constantly. Add
salt and pepper to taste.
Pour over potatoes.
